The farm fresh recipes on this page are specifically based on ingredients we are able to grow on our farm. I’ll include the month I post them so you can keep seasonality in mind. We hope you enjoy!

JANUARY

Kale & Parmesan Salad
1 Bunch of Sliced Kale
Thinly Sliced Red Onion (to taste)
Dressing:
Juice of 1 Lemon
1/2 of Olive Oil
1 tsp Salt
Toss the kale and onions
with the dressing and 1 cup of
Parmesan cheese.
Enjoy!

Beef and Cabbage Soup (this one is 100% my own recipe)
1/2 lb of stew beef
6-8 cups of water
4 cups of thinly sliced green cabbage
1/2 cup of thinly sliced yellow onion
1/4 cup of sea salted butter (I use fresh dairy butter from Lucky Layla Farms in Plano, TX. If you can’t find sea salted butter, just add 1/2 tsp sea salt)
1 tsp cayenne red pepper or to taste (optional, I like mine just a tad spicy)
dash of pepper

Cook in crock pot on low heat for several hours, until beef is cooked and cabbage is tender. I serve mine with fresh chopped cilantro, fresh squeezed lime juice and if I’m in the mood for extra spicy, some chopped jalapenos. This meal is super healthy and great for cold weather!

Spinach Salad

Anyone who knows Rebecca personally knows she loves to make salad and is quite passionate about the ingredients. Here is her preferred recipe:

Fresh Baby Spinach
Carrots
Bell Pepper (any color)
Grape Tomatoes
Cucumber
Sugar Snap Peas
Avocado
Shredded Parmesan Cheese
Hard Boiled Egg
Chia Seeds
Goji Berries or Cranberries
Sliced Almonds
Croutons
Your Favorite Dressing!

JUNE

Crock Pot Chicken, Potatoes and Fresh Veggies
1 Whole Chicken
2 Large Carrots, Chopped
4 Cups Potatoes, Quartered
2 Cups Green Beans
1 Medium Onion, Chopped
2 Cups Fresh Mushrooms
1/4 Cup Butter
1/4 Cup Olive Oil
Salt & Pepper
Fresh Chopped Dill
Fresh Chopped Basil
Fresh or Dried Chopped Parsley
2-4 Chopped Garlic Cloves
whatever else you like!

Place all ingredients in the crock pot on low for 6-8 hours and enjoy! We also recommend using a pressure cooker for 60 minutes at 7-10 PSI for REALLY tender and moist chicken!
