A Homemade and Healthy Alternative to Store-Bought, Canned Condensed Soup

For a couple of years now every time I stock the pantry with different flavors of condensed soup I cringe because I know how packed they are with fillers and processed junk, and each time I think I have to find an alternative!  I am so excited to free up space in my pantry and feel better about all those casseroles I love to make!

I found a few different recipes on the internet and adjusted them to what I like.  It turned out to be so easy!

1 cup of non-fat dried milk
3/4 cup of corn starch
3 or 4 teaspoons of your favorite herb seasonings
4 Table spoons of freeze dried onions
Mix all together and store in an air tight container

When you need a can of condensed soup just scoop out 1/3 cup of the dry mix and mix with 1 1/4 cup of broth mix and heat until thickened.  No need to heat if you are adding to a crock pot.   To add flavor you can use different types of broth or add fresh ingredients.  I just got a dehydrator for Christmas so I can’t wait to add dehydrated mushrooms and onions to this recipe!   I made a creamy potatoes and ham casserole with this new mix and my family devoured it!

Some recipes added 1/4 cup of ground bullion to the dry mix and then just added water instead of broth.   However I make my own chicken broth and freeze it so I know that my broth is “real” food.

I’m not completely happy with the only non-fat dried milk that this tiny east Texas town has to offer, so if anyone has some recommendations I would love to hear them!
